A beautiful light dinner which is both healthy and scrumptious!
Ingredients:
Chicken breast
Mixed Quinoa
Spinach
Olives
Feta cheese
Tomatoes
Salt
Pepper
Chilli paste (or chopped chillies)
Olive oil
Balsamic vinegar
Recipe:
- Rub the salt, pepper, chilli paste and olive oil into the chicken breast and bake for 30mins in a foil parcel
- Cook the quinoa according to packet instructions
- Chop the feta cheese and tomatoes
- Blanch the spinach for 1 minute until wilted
- Mix the quinoa, spinach, feta, tomatoes and olives and coat with balsamic vinegar
- Place the chicken breast on top and serve
